Pizza saves jobs, Rudi Carrara's idea
"I completed a project that I had in mind for years, but that I didn't have time to elaborate, and I halved the layoffs compared to what was necessary, making my five employees work instead of weighing on the state coffers". These are the two most beautiful things of the "Rose di Rudi" project - a 600-gram box with six pizza roses - elaborated by Rudi Carrara, owner of the "Vapore" in vicolo Sillio. It is a sort of spin off of its pizza roses, with the difference that the product is stored in a modified atmosphere, thus making it possible to keep them in the fridge for more than three weeks (they have 28 certified expiry days). Then just heated in the oven at 180/200 degrees for about a quarter of an hour and that's it. "The thing came to my mind when many told me that they would have gladly taken them, but my restaurant is too far away. So I thought of this solution and, thanks to the problems of the pandemic and the free time available, we developed since November ". "Precisely because of the Coronavirus emergency, the take-away market has had a big downturn - says Rudi -. With the request for roses in a modified atmosphere we are able to have an excellent tour, creating a volume of work that we would never have been able to. to feed with our other services ". The product is liked, it is easy to cook and does not come cold. A simple idea, which made it possible to protect various jobs. "
